Christine Le Tennier’s Flavor Pearls are a versatile and shelf stable product that allows chefs to add some molecular mixology to their repertoire. Resembling caviar, these pearls are drops of fruity, salty or spicy juices or sauces encapsulated into a thin alginate shell. Flavours include passion fruit, caramel, hot chili, vinegar and truffle sauce, and the pearls can be sprinkled on cocktails, desserts or entrees. The liquids used are of high quality, and the alginate shell is made from seaweed material.
